Wine service protocol
Wine service protocol refers to the codified sequence for presenting and tasting a bottle. The sommelier shows the label facing the host, states the estate, grape and vintage, then pours a small measure, roughly thirty to fifty millilitres, for whoever ordered. After approval, the sommelier serves the guests clockwise and finishes with the host. This ritual confirms the order matches the selection and that the wine is sound before the table is served.
